How to make a Braai Dry Rub

A dry rub is a blend of spices that seasons up your meat before you braai / grill it. It adds depth of flavour, and works with the food, and smoke to create a real magic. A dry rub can be as simple as sea salt and coarse ground black pepper, or can be as complicated as you like. Always use fresh spices, not the ones from the back of the cupboard.
Start with equal amounts of each as a guideline in each recipe, and use whatever your measuring unit that suits you. The only ones to possibly scale back are the Habanero Chillies, unless you want your head blown off.
1. Coarse Ground Black Pepper
2. Sea Salt
3. Garlic Powder
4. Chipotle Powder
5. Cayenne Pepper
6. Smoked Paprika
7. Brown Sugar
8. Dried Celery
9. Yellow Mustard
10. Dried Mixed Herbs
11. Finely chopped Fresh Herbs (Thyme, Rosemary etc.)
12. Allspice Berries
13. Cocoa
14. Instant Coffee
15. Cumin
16. Turmeric
17. Habanero Chillies
MAKE A SIMPLE BBQ DRY RUB
1+2+3+4+5+6+7

BBQ DRY RUB FOR CHICKEN
1+2+3+10+(jerk style +4+12) or (blow your head off 16+17)

BBQ DRY RUB FOR RIBS
1+2+3+4+5+6+7+8

BBQ DRY RUB RECIPE FOR PULLED PORK
1+2+3+6+7+8+9+11

BBQ DRY RUB RECIPE FOR BRISKET
1+2+3+4+7+13+14+15

Blitz up the ingredients in a spice grinder or pestle and mortar. Rub into your meat about an hour before cooking.
